Green Curry Shrimp Risotto (video) – Azzam’s Kitchen

The reason this particular risotto is purple is because of the Arborio rice, which, being black rice, releases its colour when cooked resulting in an attractively contrasting purple.
INGREDIENTS
- Shrimps
- Coconut powder
- Green curry
- Baby corn
- Chilli
- Pumpkin
- Spinach
- Water or stock
- Olive oil
- Marinade: garlic, salt, black pepper, chilli flakes and white wine vinegar.
- Spices: black pepper, salt, dried bay leaf, thyme and oregano.
METHOD
- Wash and rinse shrimps.
- Marinate shrimps with the marinade ingredients.
- In a wok sauté shrimps in olive oil until fully cooked.
- Remove shrimps and set aside.
- Sauté corn and chilli in olive oil.
- Add water or stock.
- Add coconut powder and green curry and fully incorporate.
- Add dried herbs and season.
- Add in the cooked shrimps.
- Add in half roasted pumpkins and spinach, and cook for 5 min before turning off the heat.
- Serve risotto topped with green curry shrimps and dig in.

Here he received work training in the hot kitchen and preparing “mise en place”, as well as live cooking and carving. Eager to learn new recipes and techniques, he worked in different cuisine sections: Asian, Italian and Western. His hard work culminated in both praiseworthy customer feedback and commendations from more prominent chefs, resulting in many job offers.
