Smoke & Bones – UK’s first all-Halal American BBQ street food

Perhaps a more important question, particularly if you haven’t, is where you can experience the pleasure of one that’s entirely Halal along with the unique theatre of its preparation?
Smoke & Bones, of course – the UK’s first all-Halal, American BBQ street food stall whose co-owner, Meriam, specialises in smoking top grade cuts of Wagyu and USDA Prime Beef Brisket.
In addition, while they offer HMC-certified Aberdeen Angus Beef Short Ribs and Lamb Ribs, with their lamb and sheep sustainably farmed, there’s also free-range chicken on the menu.
What’s more, not only do they also serve as a side expertly grilled premium chicken and beef sausages, but in keeping with their strict standards of Halal, these sausages are manufactured by a Muslim-owned factory.
And there’s no such thing as shortcuts with Meriam and her team either. Attention to detail appears to be of paramount importance here, with here brisket and short ribs being smoked using sustainable oak wood for between 12 to 16 hours!
Currently, Smoke & Bones operate at three of street food collective Kerb’s designated sites per week, from Wednesday-Friday and between 11.30am – 2pm (NOTE: for up-to-date market schedules, follow their Instagram).
All their effort certainly seems to have paid off too, because only last year, their Short Ribs were voted among Kerb’s top-8 street food dishes.
Hence, Meriam has every reason to be confident in declaring: “I haven’t tried an authentic Texas-style brisket in London like ours!”
Because of the long cooking process, the beef is so juicy, so tender and soft. And it’s something really different as well for Halal meat eaters.
She also reveals the simplicity with which these famous brisket are prepared: “With our brisket, a lot of people ask what we marinate it in. But we don’t marinate our brisket! All we put is sea salt and pepper, with the rest of the flavour coming from the smoke and the wood. We use good quality wood to get that extra flavour.
“Because of the long cooking process, the beef is so juicy, so tender and soft. And it’s something really different as well for Halal meat eaters.”
And because the brisket and the short ribs are both simply seasoned, they’re gluten-free, and can be enjoyed with the potato salad and slaw sides.
However, it’s not all smoke and bones with Smoke & Bones, for they also offer vegetarians the delicious option of Jackfruit Burgers, with the versatile tropical fruit being spiced with paprika and cumin, before being pulled and served in a lightly toasted brioche bun and topped with slaw, gherkins and jalapenos.
In fact, this option is so good that, while being subject to availability, sells out pretty fast. What’s more, this burger can also be prepared vegan though without the bun.
